Desayuno de domingo (pre-carrera 5k): Zumo de uva y manzana, yogur de soja con copos de avena-plátano-nueces, y pan de espelta y sésamo con mermelada de mora

Sunday breakfast (before a 5k race): Grape and apple juice, soy yoghurt with rolled oats-banana-walnuts, and spelt sesame bread with blackberry jam

  2. What a magnificent looking loaf! I hope you your tasty breakfast powered you all through the 5k. Would it be possible for you to post your jam recipe? I have a freezer overflowing with blackberries.

    • Thank you!! And I wore my ‘Veggie-Runners’ shirt for the first time! (from the Spanish Vegetarian Sports Union) I am so happy 🙂

      A freezer overflowing with blackberries?! I am green with envy 😉
      Here’s my recipe: 1 kilo backberries, 300 grams panela (or brown sugar), juice of a 1/2 lemon, 1 teaspoon of agar-agar powder (optional, if you want a thicker consistency). Put blackberries and panela (or sugar) together on a covered pot overnight. Then cook low heat for 30 minutes, stirring with a wood spoon from time to time (use a a spoon you dont mind to stain). Turn off. Add agar-agar and lemon juice, mix with the spoon, cover and let rest for a while with the
      waste heat. Blend it (or use a food mill), pour into clean jars and let it cool. Close jars with lids and cook them in a ‘bain-marie’ (in a double boiler). Let them cool, and store.
      I hope your jam turns out delicious!
